Unichef: Top Chefs Unite in Support of the World’s Children (Glitterati Incorporated) is the amazing collaboration of 40 world-class chefs to benefit The U.S. Fund for UNICEF, assembled by Hilary Gumbel. UNICHEF’s famed contributors are brought together to create an international culinary travelogue for the whole family to enjoy. Included in this incredible collection of sumptuous delights are recipes for meals as diverse as Anthony Bourdain’s Soupe de Poisson, Chef Ming Tsai’s Eight-Treasure Rice, Vikram Sunderam’s Avocado-Banana Chaat, and Ingrid Hoffman’s Arroz Con Pollo.
Distinctive recipes are just part of the narrative as each chef in an accompanying text shares his or her personal relationship to food in formative years and the genesis of their life’s work. Marcus Samuelsson, David Chang, Wolfgang Puck, Emeril Lagasse, Sandra Lee, Cat Cora, Jamie Oliver, Giada De Laurentiis and Mario Batali are just some of the talents included in this exceptional collection.
There is still more to Unichef than the recipes, personal photographs and remembrances: The author has chosen to donate 100% of her royalties directly to The U.S. Fund for UNICEF. The United Nations Children's Fund (UNICEF) works in 190 countries and territories worldwide to save and improve children's lives by providing health care and immunizations, clean water, sanitation, nutrition, education, emergency relief and more. This information rich cookbook will appeal to both foodies and families alike, while at the same time providing every reader the opportunity to join all of the chefs in their effort to support the world's most vulnerable children.
Author Hilary Gumbel has worked as a consultant for The U.S. Fund for UNICEF and has been a volunteer advocating on their behalf for the past 10 years; in 2011 she became a national board member. Hilary has traveled to Vietnam, Uruguay, Angola, Peru, Haiti and Senegal with The U.S. Fund for UNICEF to help analyze the progress of programs underway and aid in identifying what further initiatives can be undertaken by the U.S. Fund for UNICEF. She has worked in several businesses and financial institutions and now lives in New York City with her husband, television journalist Bryant Gumbel.
Gumbel observes, “I am proud to serve on the board of directors at the U.S. Fund for UNICEF. As a part of that work I have the opportunity to travel all over the world to see their work firsthand. The one common thread that I noticed from taking those trips is that culinary traditions are universal. We all share a common bond in how we celebrate, heal, pass on family traditions and nurture our loved ones with food.
“By creating a cookbook of international recipes with the world’s most renowned chefs, we could construct a bridge between people creating a mutual understanding, regardless of our cultural differences. I arranged for 100% of my royalties to be donated to UNICEF and asked that each celebrity chef also donate their recipes, photographs and share a personal anecdote toward that effort. The goal was to inspire curiosity and fun for the whole family to enjoy, while making a difference in the lives of children living in poverty.
“There were many memorable and rewarding experiences about putting Unichef together. The opportunity to learn more about each of the extraordinary chefs that agreed to participate in the book was a huge reward. In addition to learning about the chefs, I had the good fortune of working with two writers, Kate Meyers and Scott Mowbray. Both of whom donated their talent to helping with this cookbook in order to raise support and awareness for UNICEF's work.
“All of the chefs are interesting and nuanced. To have Giada De Laurentiis, Bobby Flay, Mario Batali, and Sandra Lee (just to name a few) share their childhood memories of cooking and how the experience of family and tradition inspired their lifelong passion for their craft, was very special. As in my own family, many of the chefs were influenced by their mothers. I am fortunate to have grown up with a mother that took the time and love to prepare meals throughout the year. The experiences that revolve around time spent in the kitchen; discussions, laughter, tastings, and closeness of family are shared throughout this cookbook and I hope to encourage that in others. “
It is this warmth and intimacy that comes across on every page of Unichef, making the book an incredible compendium of culinary memories that reminds us of the essential role food plays in our lives. It is more than just sustenance; it is what brings us together, over and over again, to share in the joys and comforts of a homemade meal among the company of our loved ones. Each recipe here is more than just a dish; it is a family heirloom.
As Gumbel observes, “Chic to me is unselfconscious and unstudied. When I see a person that is not trying to fit to any trend, and is instead comfortable in their own style and in their own way; that is trѐs chic!”
